Preheat oven to 350°. Spray an 8x8-inch baking dish with butter flavored non-stick cooking spray. Break graham crackers into large chunks. Evenly sprinkle into prepared baking dish. In a medium saucepan, combine dry pudding mix, undrained fruit cocktail and water. Cook over medium heat until mixture thickens and starts to boil, stirring often. Pour hot mixture over graham crackers. In a small bowl, combine cinnamon and sweetner. Evenly sprinkle topping mixture over fruit cocktail mixture. Bake for 25-30 minutes. Place baking dish on a wire rack and let set for at least 10 minutes.
