Preheat oven to 350°. Spray two 8x4-inch pans with non-stick cooking spray, set aside. In a large bowl, combine flour, baking powder, baking soda, cinnamon and salt. Set aside. In a medium bowl, whisk together sugar, egg substitute, apple sauce, vegetable oil and vanilla. Stir in zucchini. Add the wet ingredients to the dry ingredients. Stir just until dry ingredients are moist. Fold in chocolate chips. Spread batter into prepared pans. Bake for 50 minutes or until a toothpick inserted into the center of the loaf comes out clean. Cool in the pans then remove. Cut each into 10 slices.
