Simple Spanish Rice

- 1/2 cup chopped green pepper
- 1 medium tomato, peeled, seeded and diced
- 1/4 cup finely chopped onion
- 1 Tablespoon vegetable oil
- 1/2 cup uncooked long grain rice
- 1 cup low-sodium chicken broth
- 1/4 teaspoon pepper
In a saucepan, saute green pepper, tomato and onion in oil until tender. Add rice; cook and stir for 2 minutes. Stir in broth and pepper; bring to a boil. Reduce heat; cover and simmer 25 minutes or until rice is tender.
