Very Berry Muffins
From: "Down Home Cookin' Without The Down Home Fat" by Dawn Hall
- 1 cup berries (pick your favorite)
- 1-1/3 cups whole wheat flour
- 2 cups all purpose flour
- 5-1/2 Tablespoons sugar
- 5 teaspoons baking powder
- 2 teaspoons lite salt
- 1-1/2 cups water
- 2/3 cup applesauce
- 4 egg whites
- berry perserves (to match the berries picked earlier)
Beat egg whites with mixer until foamy. Add remaining ingredients, not including the perserves or berries. By hand, stir just until mistened. Batter will be lumpy. Carefully fold berries into batter. Spray muffin cups with non-stick cooking spray or line with paper cups. Fill cups 2/3 full. Put 2 teaspoon perserves on top of batter in each cup before baking. Bake at 400° for 20 minutes.
